Basil Pesto

Basil Pesto

Use this to fill my Chicken Rolled with Pesto.

Makes approximately 1 1/4 cups


1 1/2 packed cups fresh basil leaves, washed, dried
1/4 cup Italian parsley leaves, washed and spun dry
1/4 cup toasted pine nuts
4 cloves garlic, minced
3/4 cup finely grated Parmesan cheese
1/4 cup extra virgin olive oil
salt and freshly ground pepper


Place the basil, parsley, pine nuts, garlic, olive oil and Parmesan in a blender or food processor.  Blend at high speed until well mixed, 1 minute.  Stop and scrape down the sides periodically and continue to blend until smooth, 1 minute.  Season with salt and pepper.
