Jasmine Rice with Lemon Zest

Serves 6


1 1/2 cups Village Harvest  Jasmine rice, rinsed in cold water and drained
2 1/4 cups water
1 Lemon, zested (can substitute 1 teaspoon lemon thyme)


In a quart pan, combine rice and water and bring to a boil.  Cover tightly and simmer at low heat for 18-20 minutes.  Remove from heat and keep covered for 5 minutes. Uncover and add lemon zest.  Fluff with a fork and serve.
